WonTae Le became interested in charcuterie while working at Michelin-starred restaurants across Europe and Australia. He says he was “fascinated by the intense flavors that could only be achieved through dry-aging and fermentation meat.” He didn’t understand the concept until he learned that Jejuans don’t eat black pig.
He explains that “most people consume black meat by grilling, which is why neck and belly meat are expensive.” Leg meat, which is less popular and cheaper, has the same quality and flavor.
The concept of 15 Degrees was born. It is a cafe and delicatessen in Jeju City that has been open since October 20, 2021. Classic charcuterie, including black pork, is the specialty. It includes everything from French-style dry-cured hams to salumi. Order a charcuterie platter or signature sandwich (the overstuffed pastrami with sourdough bread is a great choice), fries and a Korean magpie pale ale to go and head to the beach.
